Default Controlling Content Shown on Results Page

I am indexing both the title of the page and page content. I want the results page to show the first 500 characters of the content.

You can look at my site at www.consulting-soa.com. If you put the search phrase in "Project Manager" verses "Cost Consultant" the same page is shown in the search results with different content. Can I always show the first 500 characters of content rather than the area that matches the search phrase?

Yes. What you want to disable is the Context Description feature.

Go to "Configure"->"Results Layout" and uncheck "Context description". Make sure to check "Meta description".

This will show the meta descriptions for each page instead of the contextual description. If no meta description is found on that page (and context description is disabled), Zoom will extract the first x characters of the page content indexed to use as a description for the page. The "x" here is specified by the maximum description length ("Configure"->"Limits").
